Product Overview

You have been searching for the perfect pickled sausage.

Not too hot. Not too mild. Not too vinegary. Not too soft. Not pretending to be something it is not.

We know. The journey has been long.

Well, friend, welcome home.

Big John’s Pickled Sausage is Red Smith’s best-selling sausage, and after one bite, it is easy to understand why. We are still not exactly sure who Big John is, but we do know this: the man put his name on a mighty fine sausage.

The first thing that hits you is the flavor. Then comes that firm texture. Then the snap.

Yes, the snap.

These sausages have a thin casing that gives you that classic bite people love. They are lightly spicy, full of flavor, and do not have that overpowering vinegar smell or taste that can scare off the faint of heart. As one of our customers put it, “It’s not too hot and it’s not too mild.”

That is the sweet spot.

Big John’s Pickled Sausage is juicy, flavorful, and packed in a bold pickling solution with plenty of personality. Big John apparently likes them juicy, and we are not here to argue with the man.

    Big Johns Pickled Sausage

Posted by debra kinney on 28th Sep 2013

These are GOOD !!! I like these because they are spicey and firm. I dont like a pickled sausage that is soft and mushy like a jumbo wiener !!! Sometimes the casing can be a little too firm but I would rather have it that way than soft and mushy. The only thing I dont like is the fact that you cant find the gallon size jars in South Central Tn.in stores. The 20.00 to ship is rather expensive !!!I will buy again since Penrose brand is no longer sold in jars. These are close to being the same as Penrose brand.

    Looking for a particular sausage

Posted by Charlotte Peters on 14th Aug 2013

We use to buy a sausage similar and this product is not the one I was looking for. The one I want is "spicer" and has little bits of "seeds" (perhaps pepper) in them. They were a little more "firm" and had no oil in the juice. I wish there was a distributor near so I could find the one we want. Any ideas on that?

Pretty darned GOOD . Just like the ones that I used to eat by the bushel when I was a YOUNG sailor , and was still making the beer joint (read - "dives") circuit .

    Like the old Penrose

Posted by Dennis on 31st May 2013

The sausage arrived and I was very impressed with the taste. This is the same flavor and texture as Penrose marketed years ago. I'm going to place an order today for these delicious sausages. Thank you for going the extra mile to satisfy a customer. I wish you great success in the future. Red Smith brand is by my rating five stars. A very satisfied customer.

    Too spicey!

Posted by Holly Olsen-Pierce on 5th Jan 2013

I ordered these (a gallon) specifically because it did not say spicy. These were not the Hot ones, but I found these sausages were still so spicy that they burned all the way down. I just wanted a pickled sausage-it could have even have a bit of spice, but these were unacceptable. I wonder if I got something that was mislabeled? I'd return them but it is quite a hassle and cost. I gave it two stars because they did have a nice texture and casing.
