Product Overview

You have been searching for the perfect pickled sausage.

Not too hot. Not too mild. Not too vinegary. Not too soft. Not pretending to be something it is not.

We know. The journey has been long.

Well, friend, welcome home.

Big John’s Pickled Sausage is Red Smith’s best-selling sausage, and after one bite, it is easy to understand why. We are still not exactly sure who Big John is, but we do know this: the man put his name on a mighty fine sausage.

The first thing that hits you is the flavor. Then comes that firm texture. Then the snap.

Yes, the snap.

These sausages have a thin casing that gives you that classic bite people love. They are lightly spicy, full of flavor, and do not have that overpowering vinegar smell or taste that can scare off the faint of heart. As one of our customers put it, “It’s not too hot and it’s not too mild.”

That is the sweet spot.

Big John’s Pickled Sausage is juicy, flavorful, and packed in a bold pickling solution with plenty of personality. Big John apparently likes them juicy, and we are not here to argue with the man.

    Got my sausages!!!

Posted by Unknown on 31st May 2014

I am stationed in Germany and of course they are no where to be found over here. I got tired of asking family to mail me a jar so I "google'd" them and BEHOLD I found this website. I was so THRILLED and even though the total cost (including shipping) was $65 I didn't hesitate to order them. I got them shortly after ordering...maybe a week or so (which was no time to me since I am in another country)...and was so ECSTATIC opening them and immediately bit down on one. I was CRAVING them so badly!!!! I am one happy camper to say the least AND WILL BE ORDERING AGAIN and AGAIN during the whole 3 years we will be stationed here. The only negative I have is the shipping cost, but that's understandable.

    Good pickled sausage

Posted by Mike on 7th Mar 2014

I've tried Hannah's at Walmart and they were terrible. Big Johns is sausage and not bye products. It has a little room to improve on flavor, I don't think its penrose, or big Mama, but it is good. My first batch tasted good, the second batch a little different and not as tasty. I think they should get the penrose recipe and start a line of them. The $40 price tag is a bit much also, half of that goes to shipping and they probably wouldn't be in business long if they charged less. My conclusion, theses are a good snack to have around, when your in bed, thinking what to snack on and these pop in your head. I think I may try old Wisconsin brand, and the other one glazier, or something like that and see what their like. These are good, but the others could be better, I don't know and will have to see.

    Great Penrose substitude

Tastes great, good texture and is very close to the Penrose pickled sausages that go so well with a few cold ones

    Taste like pickled breakfast sausage

Posted by Unknown on 17th Jan 2014

These are big fatty's. The casing is thick and a little tough but does provide a nice snap. The pickled taste does not go all the way through the sausage. The consistency is good and firm. The flavor is on the side of breakfast sausage. There are better pickled meats on the market. The five star reviewers below are what I would call amateurs.

Best pickled sausage on the market

Posted by CW on 4th Dec 2013

I have been buying the Red Smith sausages, today I decided to try the Big John's Pickled Sausages. Oh my!!! They are fantastic, they have a bit more of a snap and firmness. The spicy kick is also a plus.
