Product Overview

You have been searching for the perfect pickled sausage.

Not too hot. Not too mild. Not too vinegary. Not too soft. Not pretending to be something it is not.

We know. The journey has been long.

Well, friend, welcome home.

Big John’s Pickled Sausage is Red Smith’s best-selling sausage, and after one bite, it is easy to understand why. We are still not exactly sure who Big John is, but we do know this: the man put his name on a mighty fine sausage.

The first thing that hits you is the flavor. Then comes that firm texture. Then the snap.

Yes, the snap.

These sausages have a thin casing that gives you that classic bite people love. They are lightly spicy, full of flavor, and do not have that overpowering vinegar smell or taste that can scare off the faint of heart. As one of our customers put it, “It’s not too hot and it’s not too mild.”

That is the sweet spot.

Big John’s Pickled Sausage is juicy, flavorful, and packed in a bold pickling solution with plenty of personality. Big John apparently likes them juicy, and we are not here to argue with the man.

it's been one year since I had one of these. I'm from Miami but I relocated to Mississippi and I couldn't find a jar of hot sausages up here so I order them offline and I feel like I'm back at home they are so good

    Good flavor, but too soft

I was disappointed with these. The description said these are firm, in a real case. However, these are so soft that you cant bite through the case because the sausage just squishes out. If these were firm, they would be 5 star, but they were far too soft for me.

I have not been able to find these in the store for years. I am very happy with my purchase and would not hesitate to buy them again.

    Very Disappointing

Posted by William on 19th Jan 2015

Not sure what to do with the remainder of the product. Family all loves real "Polish" pickled sausage but these were most definately not real. Not much better than those fake meat products, one finds at a gas station convenience store. These were at best, hard-cased, meat byproducts pickled in chemicals. What appears to be meat fat seems to absorb the chemicals used in pickeling (or perhaps from the plastic jar) which then mostly congeals on the product surface making them really unfit to eat. After a couple days on the counter, the chemical taste simply became too strong (almst rancid). Tried refrigerating some but that only made the problem worse. Tried washing them before serving but that too was unsuccessful. Even tried to re-pickle some of them in my own brine but even that wouldn't overcome the chemical tast. I purchased the product largely based on the positive reviews I read. Sadly, I guess our tastes differ from that of the other reviewers. I didn't give the product a "one star" rating simply because there are in fact worst products being passed-off as pickled sausage - though sadly, not much worse.
