You've been looking for the perfect blend of spice and flavor in a pickled sausage and the search has been arduous... We know... We've been there. You're looking at The Pickled Store'sbest selling sausage from Red Smith out of South Florida. We're not sure who Big John is, but he makes a great sausage! Interesting to us is how the first thing that hits you is the flavor and great texture. This sausage doesn't have a strong vinegar taste or smell. Not sure how he does it but that must be the reason why Big John lent his name to the label. The sausage comes in 1/2 gallon and one gallon containers. Both containers carry the full length sausage with approximately 27 sausages in the gallon and approximately 13 in the 1/2 gallon container. These sausages have a thin casing and firm texture.

the only thing that stopped from getting 5 stars, was the 1/4 inch grease slick at top of sausages. the grease slick was not very tasty

the casing was tough and the sausages grease on them the taste was good

Yes, Big John does like his sausage on the greasy side. If you keep the container warm, the grease stays in the pickling solution and won't collect on the sausages. We like to use a hair dryer to warm up the solution, especially if they were just shipped to you in the winter. Good eating!

Love the Red Smith Pickled Sausage BUT alas they are no longer being made so we tried these Big John and they were very close to the beloved favorites. Full of flavor and snap.

I ordered these in winter, and I believe the cold weather caused some of the fat to congeal in the top of the jar. Visually it is was a little off putting, but the flavor is exactly what I was hoping for. I will be ordering these again, and trying some of the other brands and flavors, as well.

Yes, the cold weather will cause the fat to congeal in transit. Our recommendation is to use a hair dryer to melt it back into the pickling solution.
